We hope as you read this blog of our mission to the Quito, Ecuador temple you will feel the joy and happiness we are experiencing by being in the service of our Lord and Savior, Jesus Christ. We hope you can experience some of what we feel. Christine and I met in Quito, Ecuador 51 years ago while serving as missionaries. We are going home.

June 29th through July 5th

June 29th through July 5th:  Monday Sister Pena taught all the 
Americans how to make Chile Relleno.  I can’t wait to try and make them for our kids when we get back.  
Step 1 roast them on the gas stove or BBQ.
Then place them in a plastic bag for 15 to 20 minutes.  Then remove all the skin.
Clean out all the seeds and guts.  Guts, that is a technical term.
Then steam the chiles for 15 minutes or until they are cooked.
Cook lots of rice.
Make the filling.  There are many different fillings.
Layer rice in the bottom of a casserole dish with cheese mixed in.

Fill the chiles and then cover them with sour cream and mayonnaise.
Then more cheese.

One more layer of rice and cheese mixed in.

We played cards with the Rays and Roesberrys in the evening.  Tuesday and Wednesday were ground hog days.  Thursday we had 2 buses, Friday 3 and Saturday 4.  We had one group that came on Thursday and stayed for all three days.  This stake is amazing.  They bring hundreds of family cards and  work diligently to advance all the ordenanzas.  Sunday we went to two different Fast and Testimony meetings.  We had to take a few minutes in each one and say good-by to the good people of the wards we have been assigned to support for the past 14 months.  We have many good friends and will miss them very much.  We have to get serious about getting ready to come home.  We only have 2 weeks left now.  We are still trying to adjust to our new reality.  We look forward to Guatemala with apprehension and anticipation, an odd mixture of thoughts and emotions.
